Vegan Nacho Cheese Dip

This dip is creamy, flavorful and sure to add a beautiful color to any snack board. This cheese is so good, its crazy to believe that its actually healthy for you, but it is! You would never know It contains healthy fats, vegetables and nutrient-packed nutritional yeast. This recipe is so versatile and can be made drippier for nachos by adding additional water or dairy-free milk into the blender. Mix some salsa in to make a vegan queso!

This cheese worked perfectly with my jalapeño popper recipe!

What is nutritional yeast:

Nutritional yeast is a common ingredient in vegan foods because of its nutty, cheesy flavor! Not only is it a delicious cheese alternative but its also packed with nutrients like Vitamin B. Its also a complete protein which means it contains all 9 essential amino acids! This makes this ingredient perfect for vegans and vegetarians. Its also delicious and nutritious for anyone to eat!

Tools:

High speed blender

Ingredients:

-1 small sweet potato peeled and diced

-1 cup peeled, diced carrots

-1/2 cup raw cashews

-1/2 cup nutritional yeast

-3 tbsp lemon juice

-1 tsp garlic powder

-1 tsp onion powder

-1 tsp salt

-1 tbsp sriracha

Instructions:

  1. Boil water in a medium pot and add the sweet potato, carrots, and cashews. Simmer for 20 minutes until tender.

  2. Strain the pot and add ingredients into a high powered blender along with the rest of the ingredients. To make it runnier, add in a few tablespoons of water or dairy-free milk.

  3. Blend on high until smooth and creamy.
