Vegan Mayo

Vegan mayo adds rich creaminess to so many different dishes. It can be added on top of sandwiches, veggie burgers, coleslaw, macaroni salad and anything that you would put regular mayo on! The beauty of this alternative is that it is actually packed with protein and healthy ingredients! Store bought vegan mayo can contain unhealthy, processed oils and preservatives. Making it yourself is simple and you can pronounce every ingredient which is always a plus!

 I used this recipe to make a DELICIOUS coleslaw!

Ingredients: Makes 1.5 cups

-12oz package of silken tofu, drained (a firmer tofu will also work)

-1 tsp dijon mustard (or dry mustard)

-3 tbsp lemon juice

-1tbsp apple cider vinegar (or white vinegar)

-½ tsp salt

-½ tsp onion powder

Instructions:

  1. Combine all ingredients in a blender. Blend until smooth, about 1 minute. 

  2. Enjoy on all you favorite recipes!
