Tomato Avocado Salad

This salad is the definition of a quick, toss everything together salad. In just 10 minutes, this salad can be ready to take on a picnic, enjoyed as a side dish or eaten for lunch. It is delicious right away and even better after sitting in the refrigerator for 2-3 days when all the flavors seep in! This is one of my favorite refreshing summer salads and I hope you love it as much as I do!

Ingredients

  • 2 large hass avocados- peeled and diced

  • 2 large vine ripened tomatoes-diced (a handful of cherry tomatoes also works) 

  • 1 large english cucumber- semi-peeled and diced

  • ½ red onion sliced

  • Juice from 1 lemon

  • 2 tsp balsamic vinegar

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions

  1. Dice up all the veggies and throw them in a large bowl. 

  2. In a small bowl mix together the lemon juice, balsamic vinegar, salt and pepper.

  3. Pour the dressing on top of the veggies and toss them to coat completely.

  4. Eat immediately or refrigerate for 2-3 days and allow flavors to seep together.
