Peanut Butter Chocolate Chip Cookies
These peanut butter cookies are the easiest thing to whip together using a few pantry essentials. They’re a great base to experiment with nuts, seeds, jams, chocolates. They can be ready to eat in less than 30 minutes which makes them perfect for a last minute, late night snack. Enjoy with a cold glass of oat milk or a warm cup of hot chocolate! You can’t go wrong.

Ingredients
1 cup Oat flour (blended oats)
½ cup Coconut flour (or sub more oat flour)
½ cup Pure maple syrup
½ cup Natural peanut butter (crunchy or smooth)
¼ tsp Sea salt
¼ tsp Baking powder
About ¼ cup dark chocolate chips or chopped chocolate
1 tsp Flaky sea salt (optional)
Instructions
Preheat oven to 350F and line a baking tray with parchment paper.
To make the oat flour, take about 1 and a quarter cup of oats and blend them in a blender until a flour consistency, about 3 minutes.
In a large bowl mix all the dry ingredients together.
Add in the maple syrup and peanut butter, mix until well combined into a cookie dough like consistency.
Fold in the chocolate chips.
Roll equal sized dough portions into balls then shape them into discs and place on the lined baking tray. They do not expand so form them and flatten them out.
Bake for 8-10 minutes. Remove from the oven and cool on a drying rack for 10 minute before eating.
