Mango Salsa
Yet another super easy, versatile salsa to make for any occasion. This is a great salsa to just have on hand in case of a salsa emergency. I love to put it in my vegan taco bowls or just enjoy it with corn chips! Now, if you follow the theme with my recipes, you’ll see that I like to provide a base recipe and see how creative you guys can get with it! This recipe is a great example of that. You can definitely get a little funky and add different spices, different peppers, some avocado or cucumber...the possibilities are truly endless!
Ingredients:
1 mango diced
1 small red onion
1 red bell pepper diced
1 jalapeno minced (optional)
Juice of 1 lime
Cilantro (optional: I chopped up kale very finely and used that instead for color) (I’m one of those)
Sprinkle of chili powder (or chili lime seasoning from Trader Joe’s)
Dash of cayenne pepper (optional)
Salt to taste
Instructions:
Combine ingredients, enjoy right away or refrigerate for 1 hour before serving. (It’s almost too easy)
