Apple Cinnamon Bread

What better way to get into the fall spirit than with a fresh baked apple bread! This is the perfect recipe to get you in the mood for the upcoming holidays and make your house smell amazing.

Why oat flour instead of white flour?

Now let’s give oats the spotlight they deserve for a second since that’s the flour alternative for this recipe. Oat flour (which is what we get when we blend up oats), has a lower glycemic index and higher nutritional value than processed white flour. It’s also higher in protein, antioxidants, and important minerals and vitamins like manganese, Iron, phosphorus and vitamin B1. The star of the show however is a powerful fiber in oats called beta glucan. Beta glucan is so effective, it has been shown to reduce bad LDL cholesterol, reduce blood sugar and insulin levels, promote healthy gut bacteria and increase the feeling of fullness

Ingredients

  • 2 tbsp chia seeds

  • 5 tbsp water

  • 1 cup unsweetened applesauce 

  • 2 cups oats (any type will do)

  • ½ pure maple syrup

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • ½ tsp salt

  • 1 ½  tsp cinnamon

  • ¼ cup chopped walnuts (optional)

  • Filling

  • 2 medium apples peeled and diced

  • Juice from ½ a lemon

  • 1 tsp cinnamon

  • ¼ cup coconut sugar (or brown sugar)

  • 1 tbsp coconut oil

Instructions

  1. Make the chia egg by combining the water and chia seeds. Set aside for 15 minutes to gel up. 

  2. Preheat the oven to 350F, Line a bread pan with parchment paper.

  3. Mix together the ingredients for the filling, omitting the coconut oil. The sugar should melt together with the lemon juice and the juices of the apples.

  4. In a medium sized saute pan, melt the coconut oil over medium high heat. Add in the filling asn saute for about 5 minutes, stirring frequently. They just need to be slightly softened. 

  5. In a blender or food processor, add the rest of the ingredients, including the gelled chia egg. Blend together until smooth. Fold in the walnuts after the batter has been made, including walnuts. 

  6. Pour half of the batter into the bread pan, layer in half of the sauteed apples, then repeat with the remaining batter and apples. 

  7. Bake for 40-50 minutes until a toothpick comes out clean. Rest on the counter for at least 20 minutes before cutting into.
