Vegan Poke Bowls

This meal was the simplest protein and veggie packed meal I’ve made in so long! All I had to do was cook the rice and chop up a few veggies. It is such a light, yet filling dinner that felt like I ordered in! Bowls are one of my favorite things to make because there is no limit to the toppings that you can put on! Mix it up with some different veggies and sauces.

Ingredients: Serves 2

  • 1 cup uncooked brown rice

  • 2 ¼ cup water

  • 1 cup cooked edamame 

  • 1 avocado sliced

  • ½ cucumber cut into chunks

  • ½ cup grated carrot

  • Fire roasted red peppers from a jar (or 1 freshly roasted pepper)

  • 1 green onion sliced

  • 2 sheets of nori, sliced

  • 3 tbsp rice vinegar

  • 1 tsp white sugar

  • 1 tsp salt

  • 1 tsp sesame seeds (or everything bagel seasoning)

  • Top with: Soy sauce, chipotle mayo, vegan oyster sauce

Instructions: 

  1. Rinse the dry rice until the water runs clear. Boil the water then add in the rice. Follow the instructions on the package for cooking time. 

  2. In a small bowl, mix together the rice vinegar, sugar and salt. Add into the cooked rice and mix well. 

  3. Divide rice into two bowls and top with toppings.
