Spinach and Basil Pesto

This pesto is the best way to get a bunch of nutrient-packed ingredients into one delicious tasting sauce. Adding sautéed veggies and a lean protein such as salmon, chicken or baked tofu can really elevate any pasta dish into a filling, balanced meal.

Makes: 6 servings

Total time: about 30 minutes

Ingredients

  • 1 cup baby spinach leaves

  • 1/2 cup fresh basil leaves

  • 1/4 cup walnuts

  • 1/4 cup nutritional yeast (or sub Parmesan cheese)

  • 2 cloves garlic

  • 1 tbsp fresh squeezed lemon juice

  • 1/4 cup extra virgin olive oil

  • pinch of salt and freshly ground black pepper

Instructions

  1. In a blender or food processor, add in the spinach, basil, walnuts, garlic, lemon juice, salt, and pepper. Process until nearly smooth, and begin to drizzle in the olive oil until desired texture is achieved.

Note: Sauté up some veggies to top your pesto pasta!
