Mango Salsa

Yet another super easy, versatile salsa to make for any occasion. This is a great salsa to just have on hand in case of a salsa emergency. I love to put it in my vegan taco bowls or just enjoy it with corn chips! Now, if you follow the theme with my recipes, you’ll see that I like to provide a base recipe and see how creative you guys can get with it! This recipe is a great example of that. You can definitely get a little funky and add different spices, different peppers, some avocado or cucumber...the possibilities are truly endless!

Ingredients:

  • 1 mango diced

  • 1 small red onion

  • 1 red bell pepper diced

  • 1 jalapeno minced (optional)

  • Juice of 1 lime

  • Cilantro (optional: I chopped up kale very finely and used that instead for color) (I’m one of those)

  • Sprinkle of chili powder (or chili lime seasoning from Trader Joe’s)

  • Dash of cayenne pepper (optional)

  • Salt to taste 

Instructions:

  1. Combine ingredients, enjoy right away or refrigerate for 1 hour before serving. (It’s almost too easy)
