CHocolate PB Rice Cereal bars

I’m always looking for fulfilling and indulgent snacks to have in the house for when I don’t feel like making myself a snack. This recipe is so easy to make and take on the go or enjoy at home. It’s the perfect amount of sweet to fulfill my sweet tooth without leaving me with a crash soon after. This is a very easy recipe to double if you’re preparing it for more people or if you want it to last longer in your house. Just use a larger pan like a 9x9 brownie pan. I know you’ll love these as much as I do!

Makes: 8 bars

Preparation: 15 minutes

Cool time: 1 hour- overnight

Total time: About 1.5 hours until you can eat

Ingredients

  • 1/2 cup peanut butter

  • 1/3 cup 100% real maple syrup

  • 100g dark chocolate (I used 70% cacao)

    • + About 2-3 tbsp for the topping

  • 2 cups your choice of crispy rice cereal

  • 1/2 tbsp flaky sea salt

Instructions

  1. Spray a 9x5 loaf pan with spray oil (I used coconut oil).

  2. Using a double boiler system over medium heat, (click here to learn how to use a double boiler) warm up the peanut butter and maple syrup. Stir together.

  3. Next add in the 100g of chopped chocolate or chocolate chips and stir until melted.

  4. Turn off the heat and stir in the rice cereal. Stir until all the cereal is evenly coated.

  5. Transfer the mixture into the pan and press into the edges. I used a spatula to push it into the pan and condense it a little. Place in the refrigerator for 10 minutes.

  6. Melt the rest of the chocolate in the double boiler or in the microwave for 30 seconds (or until melted). Pour this chocolate over the bars and spread it evenly with a spatula or knife. Top with some flaky sea salt.

  7. Let the bars sit in the refrigerator for at least an hour. Cut up into whatever size bars you would like.

  8. Store in the refrigerator up to 3 weeks or on the counter for up 1 week.
