Chocolate Almond Cookies
These cookies are quick and easy to whip up and are actually healthy! They’re a perfect gluten-free, vegan treat to snack on throughout the day. These cookies satisfied my sweet tooth without any processed sugars! Your family and friends will be amazed that these are actually healthy.
Tools:
-High speed blender
-Baking sheet
-Oven
Ingredients:
- ¾ cups almond flour
- ⅓ cup raw cacao
- 4 dates soaked in hot water
-1 tbsp maple syrup
-¼ tsp salt
-¾ tsp baking powder
-¼ cup coconut milk
-1 tbsp melted coconut oil
Optional add-ins:
-Almonds
-Walnuts
-Chia seeds
-Chocolate chips
-Coconut flakes
Instructions:
Preheat the oven to 350F. Line baking sheet with parchment paper
Soak the dates in hot water for 5-10 minutes
Add dates into a blender with coconut oil, coconut milk and maple syrup. Blend until dates are smooth
Mix the almond flour, raw cacao, salt, and baking powder together in a bowl. Mix in any add-ins. (I did chopped almonds and mini chocolate chips)
Add the blender ingredients into the dry ingredients and mix together with a fork until a dough consistency forms.
Roll into cookie shapes and place on a baking sheet. They will not expand so make into the final shape you want.
Bake for 15-20 minutes and let cool. (or not)
