Cheesy Quinoa Bake

This is the perfect comfort food for anytime! (Seriously, I just ate this in 85 degree weather). I love using nutritional yeast to fulfill my cheese cravings and this did just that! It came out super creamy and rich. Packed with vitamins, fiber and protein, this meal is sure to satisfy without feeling like you're missing out on the decadence. It was super easy to make too! Just dump all of the ingredients into a casserole dish and bake! That’s it! I also love making my recipes super versatile so if you want to switch out the veggies or add different veggies in feel free! This would be delicious with potatoes and leeks.

Ingredients: 

  • 1 cup uncooked quinoa

  • 1 cup cubed sweet potato

  • 1 cup broccoli florets

  • 2 cups water

  • 1 cup plant-based milk (I used oat)

  • 2 tsp garlic powder

  • ½ tsp paprika

  • ½ tsp crushed red pepper

  • ½ cup nutritional yeast plus 1tbsp to sprinkle on top

  • 1 tsp salt

  • Ground black pepper to taste

  • (optional) ¾ cup shredded vegan cheese I used Miyoko’s brand cheddar

  • ¼ cup seasoned breadcrumbs

Instructions

  1. Preheat oven to 350F

  2. Add quinoa, sweet potatoes, and broccoli into a casserole dish.

  3. In a separate bowl, combine the water, milk, garlic powder, paprika, crushed red pepper, nutritional yeast, salt and pepper and mix. 

  4. Pour wet mixture on top of the quinoa and veggies and give a little stir.

  5. Sprinkle the top with 1 tbsp nutritional yeast, vegan cheese and breadcrumbs.

  6. Bake for 45-50 minutes on the center rack.

  7. Let sit for 10 minutes when done baking to set.
